Maybe I'm just a sucker for a well-told love story.

It's impossible for me to decide. I love each of them equally. They're all beautiful and poignant. Tolkien truly was a master of stories.

The Fall of Gondolin has balrogs, dragons, tanks, APCs, and a helpless Elven princess that needs to be rescued. In The Children of Hurin he dies, she dies, everybody dies, including *two* helpless Elven princesses. Beren and Luthien has werewolves, vampires, and an Elven princess who stands up and fights rather than lays down and dies. I'll go with Luthien.

Helpless elven princess in Gondolin?

I hardly think that describes Idril who comes up with the very plan that allows anyone to escape at all. And I'm scratching my head to think of anyone else that could match that description.

Now then Meglin had Idril by the hair and sought to drag her to the battlements out of cruelty of heart, that she might see the fall of Earendel to the flames; but he was cumbered by that child, and she fought, alone as she was, like a tigress for all her beauty and slenderness. There he now struggles and delays amid oaths while that folk of the Wing draw nigh — and lo! Tuor gives a shout so great that the Orcs hear it afar and waver at the sound of it. Like a crash of tempest the guard of the Wing were amid the men of the Mole, and these were stricken asunder. When Meglin saw this he would stab Eärendel with a short knife he had; but that child bit his left hand, that his teeth sank in, and he staggered, and stabbed weakly, and the mail of the small coat turned the blade aside; and thereupon Tuor was upon him and his wrath was terrible to see. He seized Meglin by that hand that held the knife and broke the arm with the wrench, and then taking him by the middle leapt with him upon the walls, and flung him far out. -The Fall of Gondolin, HoME II (BTW, Tolkien noted that Meglin bounced three times on the way down. Hilarious!)

There's a reason I chose 'Eledhwen' as my nick on TORN all those eons ago - I just love the darkness and richness of Túrin's story. Even though obviously it's really twisted.

She ultimately rescues all the people who made it out of Gondolin. It not any different than Lúthien being captured by Celegorm and Curufin twice and having to be rescued by Huan and then Beren, respectively. So Lúthien fits the bill of princess who needs rescuing actually more than Idril does. And yes, Maeglin hitting the wall three times is priceless!

Doesn't change the fact that she also has "damsel" moments

But I actually like that. The story would be boring if she was an almighty goddess with no real challenges. Those moments make the "wow" moments even more powerful.
