They don't put on the accessories afterwards - the beard and hair is already prepared the way it's being filmed =)
It could have been before the barrels sequence, but that isn't really probable, since it doesn't look much like Peter Hambleton, and the dwarf doesn't have Glóin's scar above the left eye.

Very similar nose/beard/hair. Though, it doesn't really look like Peter Hambleton under there, does it...?

The paneled ceiling behind him, which is decidedly NOT a design to be found in ME, gives away that this is a BTS shot...he's wearing something which looks like it COULD be chain-mail, but the ceiling makes it more likely that this a smock/apron used to cover the actor during prosthetic application.

3. Naked PJ cameo as Ghan-Buri-Ghan
2. Use of not only 3D, but smell-o-vision, plus the inclusion of axes coming out of the seats and poking the audience when appropriate
1. Not only keep the claim that Thorin & Co. ran amok in Mirkwood "molesting people", but depict said incident in vivid detail!!!!!
