Shame he only got brief mentions in the DVD, whereas the small scale doubles had long sections for them! Sean Astin's quote is the best, "We call him Tall Paul, which is sort of redundant since if you know Paul, you understand how tall he is." (Paraphrased, of course)

And now that he's back on duty, I'm so glad he got a warm jersey in his size so he's not freezing on the parade ground anymore. Sounds like everyone on the films enjoyed working with him too.
