I wonder who would win in a field battle between these two battle tested clans. Wookies have power and other things but Orcs likely would outnumber them and have Slave Trolls.

I would have to go for the Orcs, simply because we never really see the strength of the Wookies in the SW films.

All things being equal, I'd give it to the Wookies. I think you over-estimate the raw strength of the Orcs.

Strength is probably a wash, but Wookies seem to have a more organized, cohesive army so I'll go with them.
