I'm attending a baby shower in a couple of weeks. This sound perfect!
This reminds me of the spinach dip that could also be used as tea sandwiches that we'd have at our office parties.
Knorr Spinach Dip
1 (10oz) pkg Frozen chopped spinach, thawed (or use fresh)
1 ½ c Sour Cream
1 c mayonnaise (Hellmann's)
1 (4oz) pkg Knorr vegetable soup mix
1 (8oz) can water chestnuts, finely chopped
3 green onions, finely chopped
Butter (room temp)
Round loaf of pumpernickel or small loaf of rye bread (or other varieties)
Squeeze spinach until dry.
In med bowl, stir together spinach, sour cream and soup mix.
Add finely chopped water chestnuts and green onions.
Cover and refrigerate 2 hours or overnight.
Slice off top of round bread loaf and hollow out by pulling bread in bite-sized chunks and leave the bread shell to contain dip. Butter inside of bread shell, fill loaf with spinach dip and place on platter. Surround the loaf with the bread pieces, crackers, or variety of raw veggies.
Can also be served as tea sandwiches with small square loafs of rye, pumpernickel or other varieties of bread, small bagels, pita, etc.
