I would watch it. Sure. And love to see all the book material on screen. Simply don't believe the individual episodes would have good story archs. That's why I think the danger of invention would be very high... To create tension and urgency where none existed or was needed in the book. And more dialogue to give each character something to do during each episode.

Whereas being in a series is a guaranteed paycheck, it also limits your availability for other projects, which is why some actors have bailed on Downton Abbey, for example. So having a season off with a guaranteed return could be a Good Thing.

The books largely feature the same major characters from beginning to end...

..., and pick up a lot of other characters along the way (the Rohirrim, the Dunedain, etc) with the more minor characters popping in and out of the story. I don't at all see it as being a big deal, considering that there'd only be 3 seasons needed to complete the story. GoT has managed to do this fairly well, mainly by hiring lesser known actors for roles that require long breaks.

...but again, not everything has to be about tension and urgency all the time (even though like I said there are plenty of tense and urgent moments in the books to choose from).
How many GoT episodes have great story arcs contained within a single episode? Not many, most are just continuations of what happened in the previous episodes.

Books 3 and 5 have a completely different cast of characters from 4, although they all get back together again by 6.
