Bilbos growth by the gaining of his sense of self-worth and self-confidence which Gandalf innately senses and is why he picked him in his Godly wisdom.
Then the way the Dwarves (Thorin included) come to rely on him more and more through the course of the story and how he betrays Thorin for his own good with the Arkenstone ... a trying decison for Bilbo no doubt

I've seen his photos as a normal person, and I just did not see an elf in him, nor a kingly elf at that. He surprised me the most in these movies.
