We would get to see (or hear) Thorin round up the Company to go on the Quest. If this was ever filmed, I doubt we'll ever get to see it. Just because the start of AUJ is so long already. I'd love to have some more backstory to all the Dwarves though. Bilbo finding out about Bifur's axe would've made a wonderful 3 minute scene somewhere.
