Lord of the Rings: Three movies for three books of which a great amount is descriptive detail (which goes into designing the sets and characters, not the running time) and parts that don't further the plot (e.g., Tom Bombadil)

The Hobbit: Three movies for an episodic book in which virtually every page furthers the plot in addition to a wealth of material from appendices (remember, the "bridge" movie is now spread across The Hobbit, mainly in There and Back Again)
