I think because the dwarves were finally on an official Quest, that they could assume everything would come together exactly as they planned. Gandalf didn't say anything because he knew by now that dwarves were stern minded (pig headed) and weren't always receptive to contradiction. Gandalf probably learned to pick his battles and his arguments with them. They'd wizen up soon enough.
Physical and emotional distance from home will always matter to our hobbit.
