When Thorin was introduced to the Master, I always wondered why we don't see Hilda, Percy or Bain. We already knew them, it would make sense to see them there, so we would have a connection.

I don't expect every person in town to gather in the square every time anything happens, especially with what was the short-notice capture of the Company. Why would Bain be there, when Bard told him to stay at home before trying to find the company when they left?
I didn't "miss" them there, especially since they would've just been another face in the crowd.

that Welcome scene was filmed over three days, and there was one variation which included Bain that was filmed but not used. Bain came from behind Bard to contradict Alfrid after his lines, "Arrow after arrow he shot...". Bain stepped out and said, "But Girion hit the dragon. He loosened a scale under his wing." Alfrid and the Master poo pooed that. So it was essentially the same as the scene that made it to screen inside Bard's house where Bain says it and Dwalin says, "That is a fairy story. Nothing more."
Movie stuff changes.

Movie scenes are often (usually?) shot out-of-order, so it can be difficult to anticipate if and when minor characters or extras will gain an unexpected degree of prominence. It is made even more difficult when other scenes are lensed much later or are not filmed until reshoots take place.

Yes, we had a connection to Bilbo at the beginning of AUJ so we didn't need to see him in the rest of the film. Right?

You're comparing the main character to side supporting characters. And in the case of Hilda and Percy, very side supporting characters. You're not going to see them in every scene of Laketown.

I just think they were interesting characters who gave Lake-town its own personality. They deserved more than Legolas....

Legolas is more important to the Mirkwood group than Hilda and Percy are to the Laketown group. To make this a more accurate comparison, you would ask why the guy who blows his horn (named Feren) to tell elves to do things isn't in every Mirkwood or Thranduil related scene. We see him, recognize him when we do see him, but he's not in every scene.

Hilda, Percy and Bain are supporting characters. They'd already been introduced, so no need or reason to introduce them again.
