we do have Bofur faint during the healing scene that was cut, I do understand why they cut it, it was to much humor in a serious scene.

The Dol Guldur scene in particular has three exact or almost exact copies, all placed into different context (so it's not like there was an inescapable reason for repeating certain phrases) and all occuring in the space of a few minutes of screentime.

Gandalfs line "let us have a little more light" is more of a nod to Bilbo`s line in the book "What about a little light?" and Gandalfs line "Now Bilbo, my boy, fetch the lamp, and let's have a little light on this!"

I know that they gave several reasons for the dismiss of the original "Thranduil and Dwarves first meeting", but I would have loved to see him talking with his son about the task and Tauriel. It would have given their relationship a new depth and it would make Legolas a sudden rebel.

What can men do against such reckless hate?

Though you could argue it the other way and say that most of Sauron's orcs were either mentally dominated by the Ring or aware of their status as slaves. I think the latter is more likely personally but I don't have Mr HoME books handy to really argue for that.

Gothmog in the book being most likely a Black Numenorean seems to me a more likely choice as Lieutenant of Morgul though, in any event.

Definitely not to the White Council, but my point earlier was that I don't think Sauron would say that to the orcs either (not really the sort to hold pep rallies basically).

There was a huge Legolas frenzy after all of the LotR movies. Fan boys and fan girls alike adored him and his stunts. Bloom was considered a real heart throb, which led to starring roles in several movies that ended up not doing all that well, and his acting was pretty wooden, but I'm sure either Jackson or the studio or both wanted to re-ignite or capitalize on that frenzy.
