I know Angbor of Lamedon defended Minas Tirith in the host's absence, but do we know whether the likes of Duinhir or Golasgil may have? I can imagine Duinhir doing so due to a. wanting to avenge his sons deaths b. feeling personal responsibility for their deaths in leading them to war

Off the top of my head, I don't know that Tolkien gave us enough information for a definitive answer. Better Tolkien scholars than myself, though, may have much more to add.

Who showed up to defend Minas Tirith, and who would/could have been at the Battle before the Morannon?

Forlong the Fat, Lord of Lossarnach. (Killed on the pelennor).
Duinhir of Blackroot Vale (father of Derufin and Duilin; both killed on the Pelennor).

Golasgil of Langstrand/Anfalas
Imrahil of Dol Amroth

Dervorin (son of the Lord of Ringlo Vale).
Hirluin the Fair of Pinnath Gelin. (Killed on the Pelennor.)
Angbor of Lamedon appears to have remained in Minas Tirith after the Battle was over.

So, as you say, the only unknowns at the Battle before the Morannon are Duinhir, Golasgil, (and Dervorin (although not a Lord per se) he was a leader of 300 at the Battle of the Pelennor.)

Should we assume they ALL marched with the Army of the West?
