That's actually kind of a hard question. The Hobbit adds quite a lot, and The Lord of the Rings cuts out a lot.

I'd Say The Hobbit [In reply to] Can't Post

For that particular stage of the journey, the Hobbit films basically see the Company doing the same things (Bilbo forgets his handkerchief, Gandalf disappears, captured by trolls, finding the swords). The only real change to the plot is the addition of the Warg chase.

With LOTR, we lose everything with the Old Forest, Tom Bombadil, the Barrow-Wights. The time in Bree is significantly truncated, with elements like Gandalf's letter and Bill Ferny left out altogether. Also Merry and Pippin's role in the journey was changed quite a bit from book to film.
