But my concern about how many she eats has more to do with expense than cholesterol. I prefer to buy organic eggs laid by free-range hens. Even if bought locally, they are a lot more expensive.

I like a good southwestern frittata, and a fried egg cooked on both sides but still with a runny yolk, scrambled, boiled, poached, but my favorite is scrambled with chorizo and rolled like a burrito in an authentic tortilla. In fact, that was today's breakfast.
