Wouldn't it have been nice if the acorn Bilbo had in his hand (when Thorin thought he had the Arkenstone) was something he planted that later became the huge tree in Hobbiton under which they haad Bilbo's 111th birthday party?

It's a nice idea. But that tree is visible from Bag End in FotR. And is there in AUJ and in the auction scene. So it can't be the acorn. Did you notice the picture of Bilbo in the credits is the pic of Freeman holding the Lego Bilbo, but the minifigure is replaced with an acorn.

...but I think an oak might need longer to grow to the size of the Hobbiton party tree in Fellowship. There's a 77-year-old-oak near where I live and although it's a full-grown tree it's nothing like as big and heavy as that and the trunk's much thinner.

An english oak would take many more years to reach the size of the party tree - two to three hundred is a good age for a large mature oak, and they live a lot longer than that. In the films it's a pine, which it wouldn't be in the story: more likely an ash, a lime or an elm (though our large elms are thought to be non-native). Our native pine, which we call scots pine, doesn't grow like that and wouldn't normally be found in a Midland English field.
