When looking at the signatures on Bilbo's contract, he clearly knows of Thorin Oakenshield, while the signature clearly states Thorin son of Thrain...

when Balin receives the contract from Bilbo running after them, Balin does say quite loudly: "Welcome, Mr Baggins, in the Company of Thorin Oakenshield. So it might be mentioned as the title if not in the signature.
