Perhaps PJ made Azog, the villain of the Hobbit, white was so to draw a parallel with Saruman, of LOTR, who was also white. Just a crazy idea.

That's certainly an interesting idea. I'll not dismiss it off-offhandedly. I do not know if there is a direct correlation, but I find it interesting that both Azog and Saruman have white color schemes. Historically, we tend to associate black or darkness with evil, so by associating these villains - of which Saruman was once aligned with good - with white certainly makes for an interesting dynamic, and has sort of a deceitful quality in and of it self, I should think.
