Where did you get this information from (Elladan & Elrohir)? Just conjecture based on Gandalf's (book) statement of encountering a pair of Elrond's people while looking ahead. Also guessing that two of the Elvish horsemen we did see were Elrond's sons who were not formally introduced.

Wasn't a young boy cast as Estel?

Or was that just a rumour? If so, we may see him in the EE, if only for a second. It would also be funny to see a little scene between Elrond and Galadriel where he says 'How's my daughter? I hope she isn't causing you any trouble?' or something... Things I hope to see... - A little more in the prologue. - Bilbo at the market. - Bilbo flashback to the Old Took's party. - Some dialogue about Thrain in Bag End, possibly starting a subplot about the 7 Rings. - Extra bits of dialogue between the lesser-prominent Dwarves, scattered across the whole film. - A slightly extended warg chase scene (featuring the much-scene shot of Thorin and Fili at the rock). - Bilbo exploring Rivendell and a scene with Elrond. - A longer White Council scene featuring more dialogue from Saruman, talking of the Rings of power. - Gandalf meeting up with Radagast to go to the High Fells tombs. - A quick scene just before everything kicks off in Goblin Town, featuring the Great Goblin. Personally, I can't see anything extra being included beyond that point. There's just no room for it. Unless they put back in some violent content or something, like with FOTR's Amon Hen fight.

Gandalf meets Thorin is included in LotR Appendex A...

Can they show Gandalf meeting Thorin in Bree Why not? It is also in the Appendices. Jackson just wouldn't be able to use the exact version that was in Unfinished Tales. The account in Appendix A provides enough information to reconstruct the event.

I don't think it was ever confirmed that Estel was cast at all. It doesn't seem likely; Jackson, Walsh and Boyens have already admitted (in their FotR EE commentary) that they greatly condensed the timeline of the LotR films to the extent that Aragorn would have been an adult by time of The Hobbit, not a young boy. If they back away from that position then they have to admit that showing Sam, Merry and Pippin as adults at the beginning of The Fellowship of the Ring was a blunder.

Aragorn would be 27 at the time of The Hobbit

In the LOTR films, Aragorn claims to be 87. The Hobbit movie takes place 60 years before LOTR. Aragorn is thus 27 during Bilbo's great adventure.

I've taken into account several variables...

My math puts movie-Aragorn as anywhere from 25 to 27 years old at the time of Bilbo's adventure. Using Tolkien's timetable, it should have been after Aragorn's birthday (March 1) when he revealed his age to Éowyn. Bilbo's eleventy-first birthday party falls in the year TA 3000 according to FotR EE. I assume that Frodo and his companions left the Shire at least one year later, meaning that the Council of Elrond couldn't occur before October 25, 3001 and the One Ring was probably destroyed in March 3002. The final variable is whether we need to push the beginning of Bilbo's adventure back to April of 2940, instead of 2941. In Jackson's timeline, Bilbo would have been born a year earlier--in 2889 instead of 2890. Adaptations can get complicated.

Aragorn is actually much younger at the time of Bilbo's adventure.

From the Appendices at the end of LOTR (Appendix B) Aragorn was born in TA 2931; Bilbo's adventure takes place in TA 2941 which would make Aragorn 10 years old at the time. Bilbo's party is in TA 3001 (Aragorn would be 70) and Frodo does not leave the Shire until TA 3018, so when he finally meets Aragorn, Aragorn is then 87. Of course, this is book timeline, not movie timeline.
There it is: dwarves are not heroes, but calculating folk with a great idea of the value of money; some are tricky and treacherous and pretty bad lots; some are not, but are decent enough people like Thorin and Company, if you don't expect too much.

I am well-aware of 10 year-old 'Estel'. However, I am also in the camp that believes that Jackson has severely compressed the timeframe of the LotR films to the point that no more than a year or two takes place between Bilbo's birthday party and Frodo leaving the Shire. That compression changes Aragorn's birthdate drastically. I am only using Tolkien's timeline to guess at the time of the year for the film events.
