The first scroll ended with the barrels. The second scroll does not end with the rescue by the Eagles. It hedges its bet by showing a generic Gandalf and Thorin scene and even showing Erebor (which won't be in the movie). Which is precisely what you'd do if you weren't sure where the movie was actually going to end, because PJ hadn't yet decided on one of two break points. "Considerably more likely" may be an exaggeration, but a lot of people have remarked that ending with the rescue by the Eagles isn't very satisfying. Ending as they are about to enter Mirkwood, where we know there are giant spiders, but unexpectedly having to so without Gandalf -- that is satisfying. Both FOTR and TTT ended with the audience having a very firm idea what the characters were about to do next. That isn't true if you end with the Eagle rescue, or the arrival at the eyrie. Ending when the Eagles return them to the quest is a bit better, but not much, and needs some sort of specific hint of Beorn in order to at all resemble the LOTR endings. Furthermore, entering Mirkwood is the point where Gandalf's story line splits from the rest of the company, and remains so until the end of the next movie. That also seems to make it the better split point. I think if PJ told the folks responsible for revising the scroll and synopsis / cast list that he's 80% sure that Beorn is in the movie, but not 100%, they do just what we've seen them do. They excise the references to him, but with a hint, in the scroll, that the break point is still up in the air -- something they would never do if the break point had actually been 100% decided.
Indeed if fish had fish-lore and Wise-fish, it is probable that the business of anglers would be very little hindered -- JRRT, Athrabeth Finrod ah Andreth, Commentary, note 9.

One major problem with ending outside Mirkwood

You have to introduce a brand new character (Beorn) at the end of the film. Not likely at all. Also, noone said the Lonely Mountain will not be seen in film 1. We saw Barad Dur in FOTR, and Mt. Doom in TTT, even though F and S don't get there until ROTK. My guess is that the camera will pan up, show us the darkness of Mirkwood, and beyond it, the Mountain. And aside from the evidence from the scroll, the cast list and the synopsis, I have it on very good authority that the film ends right around the eagle rescue. Start getting use to it. Beorn will not be in film 1!

that entering Mirkwood would make a great break point, but I also think the visit to Beorn's house would make a very poor final scene. Maybe they can just excise him completely.
