Andy Serkis voiced Smeagol/Gollum, this you know, but in secret, he voiced also... The Witch King of Angmar, and all three orcs from the Uruk-Hai band that capture Merry and Pippin.
Peter Jackson appeared as the following: The drunk in Bree (Fellowship), The Rohirrim who hucks a spear at the Uruk-Hai over the wall (Two Towers), the Corsair who gets shot by Legolas (Return, Special Extended) Sam's arm as it enters frame to fight Shelo
The Uruk-Hai chanting their black speech as Saruman riles them up is actually a recording of thousands of fans riled up by Peter at a cricket match.

And turned on the commentaries - every single one? That's how you get to cram your brain with lots of facts you will never need to know again - until someone does a poll like this!

I've watched all the extras... but for commentaries, I've only seen all three movies with cast commentary and part of FotR Part 2 with director/writers commentary.

I can say that I have watch every special feature that all the DVD's have to offer and I did it in bulk I just went through a very impetuous period were i'd put one of the movies in watch it then go straight into the special features and watch them the rest of the day and night.

Over the past few weeks I have been watching the commentaries over again.

I did now about PJ's cameos - in fact, the Black sails boats have a load of cameos in them besides PJ.
