If he really goes in-depth for the intervening 60 years (and this may be the best opportunity ever for those years to be explored) then Smaug is definitely Film One and will appear. If that's only going to be peripheral (the 60 years) then it will likely be as you suggest.

My guess is that Smaug's end will be the grand finale of Film 1.

at the end of film one - we might even see a long-shot of the Lonely Mountain and a moving shadow, to visualise the as-yet unseen menace that awaits the party - but I doubt we'll see Smaug himself until well into movie 2.

I think we'll maybe get a glimpse of him in a later trailer, but I doubt much because they would want to save him for a while.
I've seen people surprised that he wasn't in the teaser, but come on. It's a year until the first movie comes out (and the second two) - the dragon is probably not even close to finished in many ways.
