Broccoli Tea Sandwiches [In reply to] Can't Post

Here you go:

Ingredients:
1 1/2 lb. broccoli florets
1/2 to 3/4 c. mayonnaise
1/2 tsp. salt
1 tsp. dill weed
1 tsp. celery seed
Optional: Other seasonings (chives, tarragon, etc.) or very finely diced onion
2 loaves Pepperidge Farm extra-thin bread, white or wheat, or similar very thin square bread
Butter, softened

Cut the broccoli florets from the stems. Using a food processor or other chopper, finely chop them; this should produce about 5 c.

Mix in enough mayonnaise to make the broccoli spreadable. Then add the seasonings; taste, and add whatever else you think might be good!

Cut the crusts off the bread. For each sandwich, butter a slice of bread and spread it with about 1 heaping tablespoon of the broccoli mixture; top with another buttered slice, and cut the sandwich into triangles.

Makes about 30 sandwiches.

It was a lovely service, and we were glad we'd prepared a lot of cookies and sandwiches, her relatives were "catching up" with one another for a couple of hours afterwards! Heart

I have made broccoli pesto [In reply to] Can't Post

steam it, then puree with basil and enough oil to make it fairly liquid, put it on pasta & dump the parmesan on, it's delicious.

I follow Adam Rose on FB/Insta. Usually he's doing funny bits, but he's way into great food hacks. In one, you take steamed broccoli florets and smush them (the bottom of a glass works) onto a greased cookie pan, then put parmesan on top, and then broil. You end up with a crispy nummy thing!

My doctor told me when I hit menopause that I needed to get lots of folic acid to prevent breast cancer, and his advice on the best way to do that was "eat broccoli three times a week."

hang a wet towel over a box fan.

I don't have AC - like Britain, we in the PNW never used to need it, so a lot of buildings don't have it - but I found a little fan thing at a garage sale that has a place to put ice in the bottom so the air flows over it. Which reminded me of how we got across Death Valley on a family trip decades ago in our old, AC-less station wagon: we had a block of ice in a dish tub in the passenger footwell in front of the air vent.

...depending on how the teams are doing.

We always cheer on NZ, of course. However, they're not known for their soccer prowess. Next, would be the good old U.S.A. If neither of those teams go far, I like to cheer for France, given those are my closest European roots. Cheering for underdogs is also popular in our household.
