For me it wasn't the digital look that damaged the environment shots, but the overly aggressive colour grade. Honestly, I actually liked the stylised palette, when it was used at the right times. In Moria, for instance I thought it looked fantastic, but it looked horribly out of place in the Shire.
I quite liked those shots in their simplicity. I think I've actually been to a few of those places, which helps.
There are plenty of great opportunities for nature shots in the next film, and if I recall correctly, Lake Town wont be CG (baring a few wide shots, I'm sure), which is quite nice.
