It could work, and it might not work. We don't know how long the Ring was lost from Gollum. I imagine it wasn't any long period of time, otherwise Gollum would have realised sooner. Bilbo finding the Ring is one massive "coincidence". Gollum loosing it, and then Bilbo finding it all in the same scene could work. But then again, do we need to see it being lost this way? It doesn't add anything to the plot, does it? And we already saw the Ring being "lost" during the FOTR prologue.
