Has to be the Lighting of the Beacons from the trilogy. Such a fantastic, evocative piece of music. There are also some wonderful soundtracks in the game Lord of the Rings Online (LOTRO). 'All Other Lights' and 'Lone Lands' are two of my favourites. As for book songs, my favourite comes from one of the LOTR lines that I quote most frequently: "Not all who wander are lost".
