Must be true what they say about English cooking . . . I adore soup. I pretty much live on it in the winter. Some of my favorites include - Moroccan tagine (really a stew) made with lots of strange spices, lemon peel, almonds, and raisins in addition to the meat and veg. - African ground-nut soup as made in Cote d'Ivoire: basically, a chicken soup with onions & carrots, but then you stir in some peanut butter and cayenne pepper. Eat over rice. - Tortilla soup - start with the basic chicken soup but add Anaheim peppers, cayenne, & cumin. Enliven with lime juice. Crush some tortilla chips into a bowl and pour the soup in. (You can cheat and use chili-lime chips to flavor it up.) Garnish with a dollop of sour cream. - Butternut squash soup garnished with caramelized onions and candied pecans. - French onion soup - thick onion soup placed in a bowl, with a piece of bread on top and then a BUNCH of gruyere cheese on top of that, broiled in the oven until the cheese melts and goes all crispy. - Around here we eat a lot of clam chowder. The right (white) kind. LOTS of clams, potatoes, and you must have a bit of bacon in for the right taste. Finished off with a bit o' cream. - and that American standby, beef stew with lots of carrots and potatoes.
