This is my 2 cents on the Del Toro credit issue

The way the WGA determines who receives credit on a script is incredibly arbitrary. Del Toro worked for a time on the initial draft of the screenplay and possibly contributed an idea (i.e. a gag, a line, etc) that made it into the script.
The credits are based on the draft that was handed into the studio. It's pretty likely that what he contributed to that draft got replaced in subsequent drafts via further pre-production rewrites and Walsh and Boyens' constant tweaking of scenes during production. There's also the decisions the actors and director make whilst filming to take into consideration.
Lastly, he's a name guy now, and one WB is backing by letting him helm Pacific Rim. I wouldn't be surprised if the studio was able to twist a few arms at the WGA to make sure his name came up, just so it's out there int he public eye.
