The purpose of the plot point was to show the divisiveness and corruption of the ring, even in the face of the strongest friendships. Sam left because Frodo's dismissal was so earth-shattering to him that he could do nothing but run. And, if you remember, he gets over this eventually and turns back. So even though he goes at first he ends up still adhering to your analysis of him: he'd never truly leave Frodo. As for Fili/Tauriel: I call "bull****." I think Not_the_beard hit it right on the nose.
