They'd tie his legs together to create the illusion of a longer body. I don't think Smaug's back legs would really require much motion capturing, so Cumberbatch wouldn't have to use his own.

Anyway, this is very interesting, and the repetetive use of the word "serpent" to describe Smaug has me extremely happy.
