When it was still only two movies, I was worried that they would leave out Gandalf introducing Beorn to the dwarves, and his retelling of their adventures; It would, after all, be somewhat redundant, having two "let's introduce the dwarves"-segments in the same movie, and retellings of fairly recent events. Having Beorn in the second movie however, not only averts that redundancy somewhat, but also gives an excellent opportunity to deliver some very natural exposition; In addition to being a great way to reintroduce us to the dwarves (probably wise, given that it'll be a year since last we saw them), having Gandalf give Beorn a fairly expansive retelling of their adventures up to this point would be a great way of catching the audience up on what's going up ("last time, on the Hobbit"). Had Beorn been in the first movie, much of what I just described probably wouldn't have made it into the movie. Yes, not getting Beorn for another year stings a little, but I hope some good can come from it, in the form of scenes that might not have made the cut otherwise.
