I do wonder about the corn

Surely it wasn't the corn that was originally called maize, unless we want to say that it was brought to Middle-earth by Númenórean explorers (a possible origin for pipeweed as well). It seems more likely that this was wheat, barley, oats or some other cereal grain. Or maybe it was a combination of such grains.
