Songs...

Merry and Pippin's song at the Green Dragon was not entirely made up, part of it was taken from the song Pippin, Sam and Frodo were singing in Woody End right before they hear the scream of the Nazgul, before they get to Maggot's farm.
Pippin's song in Minas Tirith was also taken from the chapter "Three's company".
As for "O Elbereth, Gilthoniel", you can hear it when Frodo and Sam are travelling through the woods and see the elves going to the havens. I don't remember whether the O Elbereth bit is in the movie or not, but it is in the soundtrack.
