Especially from FOTR. That movie was exceptional.
The forming of the fellowship always gets me...
Frodo: I will take the Ring to Mordor!

Frodo: Though... I do not know the way.
Aragorn: If by my life or death I can protect you, I will. You have my sword...

Gimli: ...and my axe.
Boromir: You carry the fate of us all, little one. If this is indeed the will of the Council, then Gondor will see it done.

Also, lots of wisdom from Gandalf (well, duh!):
Gandalf:Many that live deserve death. Some that die deserve life. Can you give it to them, Frodo? Do not be too eager to deal out death in judgment. Even the very wise cannot see all ends. My heart tells me that Gollum has some part to play yet, for good or ill before this is over. The pity of Bilbo may rule the fate of many.
Gandalf: A wizard is never late, Frodo Baggins. Nor is he early. He arrives precisely when he means to. (tell that to your boss just before they fire you for tardiness)
Gandalf: There is only one Lord of the Ring, only one who can bend it to his will. And he does not share power. (this is very true for all power-trippers you meet in real life)
