Basic Buttery Banana Breads

Well, finding ourselves short of pumpkin pie spice after baking (and devouring) back to back batches of the pumpkin muffins I shared here, but having lots of very ripe bananas on hand, I whipped up a dozen of these: Sird’s basic buttery banana breads (erm, muffins) The recipe is adapted from a banana bread recipe I found at Simply Recipes. Because I find muffins so much more convenient, I made them instead by adjusting the temp and relative baking time. These little beauties are so dense and moist I just know they’ll travel well on a long walk to Rivendell (or beyond ;) ). Mind you, these are not fancy—rather they are basic, satisfying and hobbity (though I’m quite sure our Holbytla friends never heard of bananas). For 12 muffins All in one bowl combine in order, mixing at each step 5 very ripe 6 inch bananas, mushed 3/4 cup melted butter 2 eggs beaten 2 tsp pure vanilla extract 1 tsp baking powder 1/2 tsp salt 1 tsp ground cinnamon 1 1/2 cup fine brown sugar 3 cups all purpose flour Mix until well and thoroughly blended then scoop into 12 muffin cups in a muffin pan using a 60ml scoop. Muffin cups should be brimming. Bake at 375F for 25-27 minutes (until a toothpick comes out clean when plunged into a muffin’s top). Transfer to a cooling rack as soon as possible. Eat, repeat!
